Lavender Lemonade Ice Pop Recipe Summer Cool Down Treat

It’s that time of year where the days are longer, the summer sun is hotter and the only thing that sounds good on a hot day is a cold, refreshing ice pops. Ice pops have always been a favorite summer treat - but add a little lavender to it and we think that is a home run! We might be a little biased! :)

Our Lavender Lemonade ice pops are very simple to make make the perfect summer treat that will cool you down and quench your thirst. These also use minimal ingredients and only a little sugar, so you don’t have to worry about eating these in your bikini by the pool.

Serves about 6 ice pops

Lavender Lemonade Ice Pop Recipe Summer

INGREDIENTS
For the lemonade

  • Juice from 3 lemons (about a ¼ cup)
  • 2 cups filtered water

For the lavender simple syrup

  • 2 tbsp dried culinary lavender
  • ½ cup sugar
  • ½ cup water

DIRECTIONS

  1. Using a citrus juicer or hand-held citrus juicer, juice the three lemons and set juice aside.

  2. Create a lavender simple syrup: in a small saucepan over medium heat, combine ½ cup sugar, ½ cup water, stir together over the heat until sugar fully dissolves. Once sugar is dissolved turn the heat off and add the 2 tbsp of lavender. Stir in lavender and let steep for 10-20 minutes while mixture cools. Using a fine mesh strainer or cheesecloth to strain out the lavender buds  - pour the simple syrup into a jar to cool further.

  3. In a large bowl or pitcher, stir together the lemon juice, 2 cups of filtered water, and 2-3 tbsp of lavender simple syrup (to taste).

  4. Transfer mixture into an ice pop mold and place ice pop sticks into each mold.

  5. Freeze for 8-12 hours and Enjoy!

Note: Feel free to add more water or simple syrup to find the perfect balance of sweet and sour for your own tastes!
